Carnival.

Here is my entry for Miriam's, a wonderful mom of triplets, cooking carnival. We made these for Thanksgiving brunch (we're Canadian so we had our turkey day a month ago). This is my workhorse muffin recipe I use many different fruits.

2 cups all purpose flour
1 tsp baking soda
1/4 tsp salk
3/4 cup brown sugar
1/2 cup butter (we subsitute apple sauce)
2 eggs beaten
2 1/3 cup pumpkin puree
Pumpkin pie spice or cinnamon to taste

Preheat oven to 325
In a large bowl combine flour, baking soda, salt and spice
In a separate bowl cream butter (apple sauce) and brown sugar
Stir in eggs and pumpkin until well blended
Stir pumpkin mixture into flour mixture just to moisten
Fill muffin cups
Sprinkle with cinnamon sugar (if desired)
Bake for 25 minutes

*To make into a loaf heat oven to 350 and bake for 60-65 minutes.

It's very yummy warm with peanut butter.

mmmm now those are tastey! and yes warm with some peanut butter is such a yummy breakfast or even as a snack!

Yumm! To make with different fruit you just add mashed up whatever instead of the pumpkin? The girls always think muffins are cupcakes and will take one rather than a cookie so I'm always looking for muffin recipes.

Yes. It's actually a banana bread/muffin recipe. I've made apple cinnamon with them too.
